Reinvented caprese salad


2 or 3 large heirloom tomatoes of assorted colors

2 fresh large mozzarella balls

1 1/2 tablespoons of balsamic vinegar 

2 tablespoons of extra virgin olive oil

Fresh ground black pepper

Sea salt

Thinly-sliced fresh basil 

Whole basil tops for garnish


Slice the tomatoes with a serrated knife.

With the same knife, slice the mozzarella into similar slices.

Stack the tomatoes and cheeses, alternating tomato colors and cheese.

Spoon 1 1/2 tablespoons of balsamic vinegar and 2 tablespoons of olive oil on top of the stacks.

Season with pepper and sea salt to your taste and garnish with basil.
