Margarita Steak Salad

Margarita Steak Salad 

Makes 4 servings


1 ½ cup Margarita mix 2 tablespoons tequila (optional)
1 teaspoon ground cumin ¼ teaspoon ground cayenne pepper
1 teaspoon lime zest 2 cups diced tomatoes
1 teaspoon salt Mixed greens or other lettuce
1 teaspoon chopped garlic 1 large avocado, sliced
4 pieces beef petite tender steaks ½ red onion, sliced
¾ cup mayonnaise Fresh cilantro
3 tablespoons lime juice  

Instructions

Combine the first five ingredients and mix well. Pour the marinade into a plastic bag, add the steaks, and marinate for 2 hours.

Remove from the bag, discard the marinade, and grill or roast the steaks to desired doneness.

Combine mayonnaise, lime juice, tequila (if used), and cayenne pepper. Arrange greens or lettuce on serving plate. Garnish with the tomatoes, avocado and red onion.

Thinly slice the steaks and place on top of the salad. Drizzle with the mayonnaise dressing and garnish with cilantro.
