BBQ Turkey Breast with Ranch Slaw

Serving Size: 4

2 pieces turkey tenders cut into 1½” cubes

6-8 slices bacon

Barbeque sauce

Bamboo skewers

2 cups each shredded red and green cabbage

1 cup shredded carrots

½ cup chopped parsley

½ chopped fresh celery leaves
(in the heart of the celery stalk)

Place the last 6 ingredients in a bowl and toss well. Taste and adjust seasoning with salt and pepper or more dressing to your liking.

Thread the pieces of turkey on the skewers, weaving the bacon slice over and under. Broil the skewers for 3 minutes on each side. Brush the skewers with your favorite barbecue sauce and cook until interior temperature reaches 160º.

Pull the skewers out and serve on top of the slaw.
